With time I’ve come to realize that following a recipe is not my strong suit. I find recipe steps daunting and often overwhelming. As a result I’ve cultivated my instincts to define the flavours and directions of my cooking and in doing so have found lasting creativity, excitement and pride.

My approach in the kitchen is to use my senses. With limited or often no recipe guidance we should all be able to create a beautiful meal that sings the song of our tastebuds. Learn to follow what your eyes, nose, mouth, hands and ears are telling you.
