Homemade Mayo in Minutes

Somewhere along the line I started having a love of all things homemade. I wanted to learn how to strip back the dishes I loved making to understand each component that married together to create a delicious meal. And in this part of my cooking journey I realized that there is a high satisfaction associated with making homemade items and a high payoff. In other words bloody yummy.

One of the first foods that I was curious about making completely from scratch was Caesar salad dressing. It is from that I ended up learning how to make my own Mayo. The recipe I had chosen to try called for Mayo and I really didn’t want to buy store bought. This was an adventure in self creation. So before there was Caesar salad dressing, there was Mayo. I have to say it was so incredibly easy and quick to make this Mayo that I’ve truly never purchase Mayo again.

With a short list of ingredients and one specialized tool, this homemade Mayo can be yours for all your Mayo needs. In order to whip up this Mayo in mere seconds you will need an immersion blender with its canister. See photo below for the one I have. For this to work you’ll need the canister with the blender to keep the ingredients tight together for a quick and easy whip. On the ingredients side you will need 1 egg, 1 cup of oil (I go with Sunflower or Safflower), 1 teaspoon Dijon Mustard + 1 tablespoon of lemon juice. I don’t generally follow recipes but for first timers I would recommend sticking to the above and then experimenting with more or less mustard or more lemon or other acidic component (not less, we want a full tablespoon in there).

The thing about Mayo is that it can take on some many forms. I’ve often added chipotle to my homemade Mayo to give it a smoky, spicy kick for a burger topping. Or I’ve been purposefully heavy handed with the lemon to give it a lemony tang when using as a base ingredient for other dressings. So many endless options. Once you learn the basics, you can twist it to be anything you want, crave or need in your recipe.
